Spicy veg and bean soup, great for using up veg that needs using… cheap to make and will serve 6 hearty portions.
4 chillis
2 garlic cloves
an inch of grated ginger
4 shallots
1 red pepper
1 courgette
half a butternut squash cubed
tin of kidney beans
litre of veg stock
teaspoon of cinnamon
teaspoon of cumin
tablespoon of ground corainder
wilted spinach or frozen spinach balls.
I fried 4 chillis (i like it hot though), 2 garlic cloves, ginger about an inch of it grated and 4 shallots and red pepper for about 5 mins then added a cubed courgette and half a butternut squash cubed (could use sweet potato), and a tin of drained kidney beans. Then a litre of veg stock. Then a heaped teaspoon of cinnamon (this really adds to the flavour) a heaped teaspoon of cumin and a tablespoon of ground coriander and let it cook for about 30 to 40 mins., then wilted some spinach leaves in, or can add a couple of frozen balls.
