Oxtail Stew & Soup

Oxtail not traditionally used much anymore, but is delicious, With 1 oxtail I made a stew and a soup, the soup serve 5 and the stew served 7.
I put an oxtail bought from the butcher for £2.50 into the slow cooker with 150ml of water and left it all night around 8/9 hours. In the morning I stripped the meat from the bone.The big chunks went in the stew, the scrappy bits into the soups.

Oxtail meat
Butter beans, dried cooked or a tin
2 carrots
2 parsnips
1 onion
3/4 potatoes
2 bay leaves
bunch of fresh thyme
2 tablespoons of tomato puree
3 garlic cloves
1 chilli optional
beef oxo and water

All of these ingredients chopped, with the bigger chunks of oxtail went in the slow cooker with enough water to cover and the crumbled oxo cube, was then left for 8 hours and made a delicious, very rich stew.
If you want to thicken it add some cornflour to cold water to make a liquid and add that at the end. I didn’t.

I did the soup in the soup maker.
Scrappy bits of meat
2 carrots
5 to 10  peppercorns (depends how peppery you like it)
1 onion
1 celery stick
2 tablespoons of tom puree
Sprig of thyme
1 beef oxo and water.

I just put it all in the soup maker and let it do its thing, if you’re doing it on the hob, jut cook till the veg is soft and then blend12208723_10153262575864639_1190630878090020446_n
