Chicken Chow Mein

This recipe is adapted to make it syn free on slimming world… It tastes very authentic.
Much cheaper than a takeaway.

Serves 4

First make sauce
3 tablespoons of tom puree
2 tablespoons of soy sauce
2 tablespoons of oyster sauce, (mushroom sauce could be used as a veggie alternative)
2 crushed garlic cloves
Thumb size of grated ginger
and a bit of water about 2 tablespoons. mix well

Fry 2 chopped chicken breasts,
1 chopped onions,
2 green peppers,  (but you can add any veg)

Cook  3 nests of dried egg noodles in water and drain

Add sauce to the chicken & veg.
Then add noodles, mix it all up well, heat through and serve…
Bean sprouts are a good addition to add also.

My name is Miki, and I live healthily on a budget, I am not a vegetarian but do have many meat free days, I have a lot of love for beans, pulses, lentils and veg, so you will see many meals posted based around these ingredients. I will also post meat and fish recipes. I spend no more than £30 per week for 2 full time adults, plus my 2 elderly inlaws evening meals (I do meals on wheels for them) and my granddaughter a couple of days a week...I love food especially savory food and curries, but I do have to watch my weight so many of my recipes will be low in fat, with the odd pie thrown in lol.

Enjoyed this tonight with variations I did not have tom puree but had a handful of sad looking cherry tomsAlong with the garlic, ginger, soy, oyster sauce, a pinch of chili flakes, and onion, these where blitzed and made into a sauce. Cooked up chopped capsicum and chicken thighs, added sauce pulped, then used 2 minute noodles. Bluddy fantastic, I think I am back in Thailand on a budget LOL I will re-use this recipe , with acknowledgement to you, on FB Surviving on a PensionCheerspg
