3 equal cup method, same cup, break eggs into it, where ever level comes too, fill same cup to same level with milk, then same again with flour.
Home made yorkies. i make in batches and freeze, then pop in oven from frozen for 4 to 5 mins like you would aunt bessies, only way better.

heat oil in yorkie tray till very hot, pour in batter and put in oven for 25 mins. cool before freezing.
DAMPER BREAD, EASIEST BREAD EVER TO MAKE, AND CHEAP…
Aussie olive and fennel seed damper bread, easiest bread ever to make, you can add anything you want, cheese works really well, rosemary etc… i believe its a bread traditionally made in the bush on campfires,
450gms of self raising flour,
a tablespoon of olive oil,
pinch of salt
225ml of warm water,
plus whatever you want to add
mix dry ingredients, i added fennel seeds, add oil and make well and add water, stir make dough, no need to knead, make flattish then add olives or whatever you want cheese etc, then fold edges in so olives are encased, keep doing it and pushing filling in, then make into round shape, put wooden spoon acrooss to make indents, push spoon handle down to nearly the bottom, into preheated oven for 30 mins on gas mark 6
Serves 3 to 4 big bowls.
ok you can use any meat or prawns and any veg, ive used quorn in this, but you can use chicken, beansprouts, add noodles etc..
thumb size piece of ginger
half a pepper
handful of sugarsnap peas
handful of quorn chicken pieces
handful of mushrooms
2 pak choi
tablespoon of rice vinegar
tablespoon of soy sauce
half a teaspoon of sugar
600ml of stock of choice.
fry 2 shallots or an onion or spring onion, with a chilli and thumb size piece of ginger grated or chopped, add in chopped pepper, sugarsnap peas and the quorn and fry for a few mins…
Add a tablespoon of rice vinegar and half a teaspoon of sugar or sweetener, then add 600ml of stock and cook for 5 mins, add a tablespoon of soy sauce, mushrooms and pak choi and cook for a few mins more.
This is hot, due to the scotch bonnet chilli can sub for a milder chilli
Caribbean pepperpot stew (very spicy)
chicken thighs, can get at a reasonable price
700ml of stock
fresh thyme, can use dried
scotch bonnet chilli, very hot
2 cloves of garlic
2cm of fresh ginger
2 bay leaves
2 teaspoons of allspice
tin of butter beans (or dried ones cooked)
2 or 3 sweet potato
200ml of coconut milk, i buy 400ml tins and freeze half, can go from freezer into a curry, B&M, Home Bargains often hae coconut milk in cheap.
2 chopped toms
fry the chicken, onion, garlic, ginger, toms and chilli till cooked
add the stock, thyme, bay leaves and all spice
then add beans, sweet potato and cook for about 40 mins, stir in spinach and coconut milk and cook for a further 10 mins.. serve with rice..
Spicy veg and bean soup, great for using up veg that needs using… cheap to make and will serve 6 hearty portions.
2 garlic cloves
an inch of grated ginger
1 red pepper
half a butternut squash cubed
tin of kidney beans
litre of veg stock
teaspoon of cinnamon
teaspoon of cumin
tablespoon of ground corainder
wilted spinach or frozen spinach balls.
I fried 4 chillis (i like it hot though), 2 garlic cloves, ginger about an inch of it grated and 4 shallots and red pepper for about 5 mins then added a cubed courgette and half a butternut squash cubed (could use sweet potato), and a tin of drained kidney beans. Then a litre of veg stock. Then a heaped teaspoon of cinnamon (this really adds to the flavour) a heaped teaspoon of cumin and a tablespoon of ground coriander and let it cook for about 30 to 40 mins., then wilted some spinach leaves in, or can add a couple of frozen balls.
Fabulous warming veg dish, can add any veg of choice, delish with thick homemade bread…
Goulash is traditionally made with beef, but this is a vegetable version, i fried 2 onions, 3 peppers, a leek, 3 garlic cloves, a chilli, then added 4 tablespoons of sweet smoked paprika, a tin of toms, 500ml of stock, 2 bay leaves, 2 sweet pots, half a cauli and half a broccoli head (all needed using) simmer for an 30 to 40 mins, serve with crusty bread.
Red lentil cottage pie with cheesy sweet potato topping
3 carrots, chopped
1 onion, chopped
2 garlic cloves
200gms of red lentils
500ml of veg stock (i use aldi cheap stock cubes, 2 in water)
50gms of frozen peas, again i use Aldi ones
3 or 4 toms, i use ones that need using, over ripe ones
fry the carrot, onion n garlic until soft,
add the lentils n stock, boil for 10 min,
stir in toms chopped small and the peas, and a dash of tobasco (optional) add a few glugs of worcester sauce
cook for 5 mins and transfer to oven dish.
peel n chop sweet pots then boil n mash, spread on top of lentil mix…. add grated cheese, pop in oven for 20 mins on gas mark 6…. serves 4 easily, very nice with baked beans on side or veg
