Lentil Chilli Non Carne

lentil chilli the chilli cost approx £1.25 to make and serves 6 to 8 depending on portion size, serve with rice, chips, pasta or whatever you prefer… can leave out pepper or add any veg you need to use, the lentils are brown and for 200gms cost 32p based on tesco world food aisle lentils at £3.25 per 2 kilo bag.
kidney beans 20p a can home bargains, tomatoes 32p a can, stock 3p for cube using everyday stock cubes, rice i buy in 20 kilo sacks from ethnic store.

fry an onion, pepper, 3 garlic cloves, 3 chillis till soft, add a teaspoon of cumin, a tablespoon of paprika, a teaspoon of marjoram, and a teaspoon of sweetener, stir in. make up some beef or veg stock about 400ml, add it, then add 200gms of brown lentils, brown work better than red as they keep their shape, dont turn to mush.. add a tin of kidney beans and a tin of chopped toms… turn to low and let simmer for 40 mins (check all fluid doesnt soak up, if it does add water), add end add a tablespoon of lime juice…

Leafy/stem Soup

12189590_10153237692744639_6905773074601630637_nYou absolutely can use the broccoli stem, cauliflower leaves, sprout peelings to make soup, lots of goodness in these parts… Not everybody has rabbits to feed, so if you have no small furry creatures to feed then soup it..

LEAF SOUP, (I freeze sprout leaves, cauli leaves, broccoli stems, cabbage stems etc to use for soups.
Not sure how to price this as its mostly waste.
sprout leaves, broccoli stem and outer cauli leaves all chopped.
Add an onion 10p
2 garlic cloves 10p
2 everyday stock cubes 6p
cook it all up till soft ad blend..

Corned Beef Pie

Corned beef pie,
Boil carrots, x3
white onion x1
cubed spuds x4
All in the same pan
don’t let it go mushy though,
drain and open 1 tin of corned beef and chop up, mix in with veg,
crumble x1 beef oxo over,
stir in
put in oven dish
 
make pastry,
250gms plain flour,
125gms of stork,
mix together till like crumbs,
add a bit of cold water and make a dough,
roll out and cover mix…
put in oven for 20 mins, gas mark 6,
We had with cabbage and beets…
serves 6.

say 50p for veg
flour 8p
stork 30p so around £2.50 to make so 42p per person.

 

Coconut & Lime Dahl

In a pan add 100gms of yellow split peas (chana dahl) and 50gms of red
lentils with water and 2 garlic cloves chopped, a teaspoon of turmeric
and grated ginger, and some coriander fresh or dried, let that cook for
40 mins to an hour
meanwhile make the tarka bit
fry some cumin
seeds and 4 red chillis chopped, a small onion and a teaspoon of garam
masala and 2 chopped toms, let this fry for 10 mins so you have a nice
oil coming from it…
then add the tarka to the dahl and mix in
well, cook for 10 mins more, then add half a can of coconut milk, and
juice n zest of a lime,,
24p for split peas and lentils
half a tin of coconut milk 17p based on tesco world food aisle 3 tins for a pound
spices i buy in bulk from asian shop so pense
garlic 10p
ginger 10p
2 toms 20p
2 chillis? unsure as i grow mine and not bought for years
all in all this would cost you around a pound to make maybe £1.20, will serve 4.

My name is Miki and I live healthily on a budget, I am not a vegetarian but do have many meat free days, I have a lot of love for beans, pulses, lentils and veg, so you will see many meals posted based around these ingredients. I will also post meat and fish recipes.
I spend no more than £30 per week for 2 full time adults, plus my 2 elderly in laws evening meals (I do meals on wheels for them) and my granddaughter a couple of days a week…
I like to use local markets for meat & fresh vegetables, it keeps costs down. Lidl & Aldi are my supermarkets of choice.
I love food especially savory food and curries, but I do have to watch my weight so many of my recipes will be low in fat, with the odd pie thrown in.
