Aubergine Parmigiana

In lidl at the moment, aubergines are 39p each for decent size ones.
My market is doing 4 for a pound.

So around £1.60 to make this dish to serve 4, 40p per portion.

In a pan add 2 tins of chopped toms, chopped onion and 3 garlic cloves crushed, 2 bay leaves and sweetener, heat thru…
slice 1 large or 2 small aubergines length ways, and cover in salt and leave to draw moisture out, rinse salt off and pat dry,

Parmesan is traditionally added to this recipe, I didn’t this time, you can also add breadcrumbs.
