2 tins of chopped tomatoes 50p

slice 1 large or 2 small aubergines length ways, and cover in salt and leave to draw moisture out, rinse salt off and pat dry,
fry aubergines in batches in hot pan till blackened, then layer oven dish with aubergines and tomato mixture, finish with slices of mozzarella, and bake in oven till crispy on top about 30 mins…
Parmesan is traditionally added to this recipe, I didn’t this time, you can also add breadcrumbs.

ok you can use any meat or prawns and any veg, ive used quorn in this, but you can use chicken, beansprouts, add noodles etc..
thumb size piece of ginger
half a pepper
handful of sugarsnap peas

tablespoon of soy sauce

600ml of stock of choice.
fry 2 shallots or an onion or spring onion, with a chilli and thumb size piece of ginger grated or chopped, add in chopped pepper, sugarsnap peas and the quorn and fry for a few mins…
Add a tablespoon of rice vinegar and half a teaspoon of sugar or sweetener, then add 600ml of stock and cook for 5 mins, add a tablespoon of soy sauce, mushrooms and pak choi and cook for a few mins more.
Fabulous warming veg dish, can add any veg of choice, delish with thick homemade bread…
Goulash is traditionally made with beef, but this is a vegetable version, i fried 2 onions, 3 peppers, a leek, 3 garlic cloves, a chilli, then added 4 tablespoons of sweet smoked paprika, a tin of toms, 500ml of stock, 2 bay leaves, 2 sweet pots, half a cauli and half a broccoli head (all needed using) simmer for an 30 to 40 mins, serve with crusty bread.
